Air drying herbs is an easy way to preserve plants with sturdy leaves that are not susceptible to mold. Punch holes in a paper sack and hang to dry.
A dehydrator or air fryer is a reliable way to dry herbs more quickly in small batches. Use a grill pan to cover leaves if using an air fryer (dehydrate setting).

Use a microwave to dry herbs when time is of the essence. Start with a lower power setting and a short burst of 30 seconds followed by 15-second intervals.
Oven drying is our favorite method tested. You can dry herbs in under 30 minutes in large batches. A low heat setting is key.
